Michel Garrigue

Born in the Basque region from a confectioner family, Michel Garrigue started learning his craft at the age of 16 at the family-run shop Darricau, where he soon discovered his passion for chocolate-making.

He therefore specialized in this field spending a year working at Lenôtre, followed by several training sessions in Belgium. Dodin, a famous confectioner from Biarritz, also taught him useful cooking secrets such as toffees or Basque turon.

Michel Garrigue's passion for travelling led him off the beaten tracks of Japan, the Philippines or various countries in Africa. He came back from these adventures with a pronounced taste for exotic and little-known flavour combinations like cinnamon, cloves, ginger and cardamon.

He then ran a bakery in California for three years, a country where he soon learned that perfection is the key to success.

Supported by his wife Laurence who influences his work with her great taste and artistic sensibility, they took over the Darricau shop in 1994 and together focused their activity on Michel Guarrigue's passion: chocolate.

Darricau Founded in 1913, Darricau offers a range of imaginative handmade chocolates, including pavés de Bordeaux "Bordeaux cobblestones". These luscious little cubes are made of praline and wine-soaked raisins dipped in chocolate and rolled in cinnamon sugar.

Today, they offer original creations combining cocoa with exotic tastes as well as classic chocolates like the guinettes (cherry and rhum coated with bitter chocolate), refined pralines and ganaches. Michel Guarrigue's latest creation, a divine creamy chocolate filled with Medoc or Sauternes wine jam, is so far the masterpiece of all his work.
