	1999, Bollinger Grande Année Champagne, France Fruit was hand-picked and pressed gently as whole bunches. The first alcoholic fermentation took place in oak barrels, the warm cask fermentation giving complex flavor and higher than usual levels of glycerol. After fermentation the wines were blended and went through a second fermentation in the bottle to produce the sparkle. The wine was only disgorged before sale, so this vintage has spent 5 years in bottle gaining complexity through ageing on its lees.
