First made in 1948 by Robert Pariès, Jacques Damestoy’s grandson, "mouchous" are a delicacy as tender as a promise of love. "Mouchou", the French spelling of the Basque word "Musu", means a kiss. Sweetly rounded off and grouped together in pairs, mouchous are delicacies worthy of Cupid. The crunchy outside reveals a soft filling with the bitter-sweet taste of the finest Spanish almonds. This minor miracle of smoothness makes an ideal accompaniment for desserts, coffee breaks or tea breaks.

Jacques Damestoy started out as a chocolate maker's assistant, and went on to set up his own chocolate making shop in the Arènes district of Bayonne; he was very intransigent about the freshness and the quality of the products he used. His demanding principles were the key to his impressive success… Even today, the PARIES firm continues to pay tribute to him. With over a hundred years' experience, the PARIES firm makes no concessions when it comes to selecting its raw ingredients. Guanaja, Caribbean, Manjari, Tobago or Gran Couva are some of the greatest single-region chocolates, guaranteed 100% pure.
This irreproachable selection goes with tried and tested practical experience in the craft. There are over sixty types of sweet in the gourmet range, and most of them are original creations. Amongst them, we can mention "Pariès", "Caracas", "Lauburu" or "Irrintzina" as so many tributes paid to the Chocolate god… We won an AWARD at the 2002 Salon du Chocolat in Paris for our "Pariès" ganache.

The firm’s oldest speciality is a creation of the chocolate maker Jacques Damestoy, who developed a soft, fondant chocolate toffee in 1905. Inspired by the social circles of Biarritz in the early years of the twentieth century, when Russian grand dukes were the main subject of the gossip columns, the talented chocolate maker chose to christen the small caramels with the exotic name of "Kanouga", a subtle alteration of Kalouga, a Russian town. Sumptuously enriched with walnuts or hazelnuts, with coffee and vanilla flavouring, the Kanouga as such is a whole world of subtlety. On the other side of the Atlantic, the New York press made no mistake when it called the delicacy the “best toffee in the world”. Awarded a prize as the best sweet at the 2001 Salon Saveur in Paris. Named as the best toffee in the world by the New York press.

A delicate mixture of almonds and sugar, "Tourons" are made in the Pariès firm’s back shops. It was in the 13th century that the nuns in Toledo developed the recipe for the delicacy, which could be kept for several months. Tourons are made in the traditional way, and there are many varieties. They can be flavoured with fruits, vanilla, coffee or chocolate, and they are also well suited to subtle touches such as ginger or the pistachio.

The Pariès firm’s confectioners make a wide range of creations on the premises, including the famous major speciality known as “Basque cakes” with their ever-growing reputation. They are appreciated well beyond the Basque Country, with their crunchy golden outside hiding a soft, creamy filling made with almond cream or delicately flavoured black cherry jam. A dessert with all the generosity you could wish for, and almost an emblem…
Our Basque cakes are cooked and dispatched in wooden moulds that guarantee product freshness and safety during transport.
