As the name "Bellevue" (a marvelous view) suggests, the vines (as well as the wonderful gardens and remains of the Roman vineyards) look out over the valley. They boast a superb aspect, grown on South and Southwest facing slopes, in a terroir of great intricacy with predominantly chalky-clay soils.
Methods enabling the grapes to be tipped straight down onto the presses (avoiding bursting) ensured that the fruit stayed in good condition right up to vatting.
Due to the grape's perfect ripeness, gentle extraction methods were chosen, bringing to the fore the aromatic subtleties of this grand terroir.
