Chateau Olivier Pessac Leognan Bordeaux France
Chateau Olivier is just one of six chateau entitled to produce both red and white wines under the Graves classification of 1959. The origins of the property can be traced back to at least the 12th Century, when records indicate the presence of a building on the spot where the chateau now stands. Over the centuries it was handed down through the generations until, by virtue of marriage, it came to the Pernal family in 1663, and subsequently from them to the Secondat family. The most recent change in ownership was in 1886, when it was secured by the Bethmann family. Currently in charge is Jean-Jacques de Bethmann. During the past two or three hundred years the chateau has seen extensive refurbishment and renovation, and what stands today is largely of the 18th Century. It remains, however, an impressive and attractive building, hidden in a clearing in the woods of Leognan.

The vineyards total 48 ha in all, and there are a variety of terroirs, including Gunzian gravel and limestone, with areas of quartz, flint and other minerals. Three quarters of the land are devoted to red grapes, with 45% Merlot, 45% Cabernet Sauvignon and 10% Cabernet Franc, with an average vine age of 25 years. The white grape vines are 55% Semillon, 40% Sauvignon Blanc and 5% Muscadelle. Planting density is 8000 - 10000 vines/ha. Practices in the vineyard and winery are modern, and include sorting both at harvest and in the winery, a long cuvaison of up to 30 days, temperature controlled fermentation (colder for the white than the red) in steel with use of press wine an option. Both wines see a year in oak barrels, of which one third are new each vintage. The grand vin is Chateau Olivier, made with consultation from Guy Guimbertreau, production totalling approximately 18000 cases per year. The white wine is also Chateau Olivier, made with consultation from Denis Dubourdieu; here there are approximately 6000 cases per year. There is also a second wine, La Seigneurie d'Olivier du Chateau Olivier.

Domaine Olivier was created in 1967. The familial property stretches over 10 hectares in Santenay, Savigny-les-Beaune, Pommard and Nuits Saint-Georges. Wines are produced according Burgundy traditions and new techniques.
This is Jules Olivier, the Great Grandfather who started cultivating vines in 1910 on 1.5 hectares. The brand Champagne Olivier was born later in 1968 thanks to Mr Jean-Claude Olivier.
Champagne Olivier Père et Fils has now being made for 4 generations in the total respect of traditions.
The Vineyard stretches over 10 hectares around the tourism road of Champagne. It is planted on the sunny hillsides of Trélou-Sur-Marne. We produce 3 grape varieties: The Pinot Meunier, the Pinot Noir and the famous Chardonnay!
